If you have three or four slices leftover, make banana bread sundaes with dulce de leche. Cut the slices into small cubes and place them on a baking sheet. Drape a clean tea towel over them and leave them to dry out for a few hours. Once they have lost some moisture, layer them with your favourite vanilla ice cream and then top the sundae with more banana bread cubes and a generous swirl of dulce de leche. Yum!

Banana Bread Dessert-wiches

Turn your leftover banana bread into dessert-wiches with just a few easy steps. First, pour some sweetened coconut onto a baking sheet and bake at 300 degrees F for 20 minutes or until they look tan and toasty. Spread chocolate-hazelnut spread between two slices of banana bread then sprinkle with toasted coconut and sandwich together. Slice and share or have it to yourself! This sweet sandwich makes a great afternoon snack or dessert.

Banana Bread French Toast Sticks

Who doesn’t love french toast?! You can use your leftover banana bread to make french toast sticks for an extra delicious and flavourful version of the brunch classic. Start by slicing a few pieces of banana bread into sticks then placing them on a baking sheet. Cover with a tea towel and allow them to dry out overnight. The next day, combine 1 ½ cups of milk, 1 tablespoon of vanilla extract, ¼ cup of sugar, and a pinch of cinnamon. Beat in two eggs then dunk the banana bread sticks in the mixture and transfer to a greased baking sheet. Bake for 15 minutes at 350 degrees F. Sprinkle with icing sugar, douse with syrup, and enjoy!
