What to do with Left Over Banana Bread? It may never happen because ours is so delicious...But if you find yourself in a dilemma this is what we do in my home.
If we have ordered too much banana bread for the shop in a day we take some home. Our staff love making French toast with it a few days later, if it is not all eaten right away. (remember I started this conversation saying this may never happen!) When there are leftover slices that might be a little dry we make french toast with it. The best recipe to use is your traditional French toast recipe (be sure to add a little cinnamon!). Simply dip the banana bread in the egg mixture just like how you make French Toast and fry in a frying pan. You will be so surprised at the complex flavors! It is simply delicious, in fact why wait for left-overs? if this sounds delicious to you, sneak a piece or two and throw it in the frying pan!!
I love to put my banana bread in the toaster a day or so after it has been baked. It warms up the bread and it is so delicious with peanut butter on it! You can even add a touch of honey to sweeten it up a little. I love crunchy peanut butter on toasted Banana Bread!
It has never happened yet in my house, but I hear you can make a trifle, with banana pudding from left-over banana bread or you can sprinkle it over ice cream. (I have not tried that as there is never enough left over!)
